I have cooked freshly cleaned Bluefish this way with good results. On the grill I put tin foil, then the fish skin side down. I put paprika, a little butter, hint of lemon for about 15 mins. on low heat. Yum, Yum. Same recipe with Salmon. Yum, Yum. However, the same recipe with Spanish leaves me with a bit of a strong taste. Never had the problem with Blues even out of the freezer 10 months later. Whasupwidat??? :confused: <br /><br />Recipe for frying spot,trout,croaker: Invite mother-in-law over. Yum, Yum. ;)

Arnold, I cook salmon almost the same way. I put a little olive oil instead of butter on the top to make sure it does not dry out. I put a little salt and pepper. When on the grill in the aluminum foil, I squeeze fresh lemon on it twice. When firm to the touch, I slide the aluminum foil onto a cookie sheet and take it in the house. This works well for trout also. M
