I have cooked freshly cleaned Bluefish this way with good results. On the grill I put tin foil, then the fish skin side down. I put paprika, a little butter, hint of lemon for about 15 mins. on low heat. Yum, Yum. Same recipe with Salmon. Yum, Yum. However, the same recipe with Spanish leaves me with a bit of a strong taste. Never had the problem with Blues even out of the freezer 10 months later.
