I learned a new trick from an old fisherman this year. He says it makes Northern Pike taste better. I'm not sure, maybe, but they sure look better.<br /><br />After he catches one, he puts it on a stringer, holds it over the side of the boat, and cuts its throat. Then he drops it in the water to let it bleed out. After a while he puts it on ice.<br /><br />You would have to see it to believe it. His fish were as white as walleye, mine were yellow.<br /><br />Does anyone else do this???<br />With any other species???

Yes Roscoe.<br />We have a species called Kahawai (Sea Salmon in Australia), which has a very strong taste. It is said that to bleed it the way you describe improves the taste.<br />Personally I have found it makes little difference. It does however make the flesh look better. When filletted the fish has less blood along the lateral line next to the skin. Usually I remove and discard this so as to improve the taste.<br />Bleeding has this effect on the 'oily' species of fish here in New Zealand.<br />Ross

i was on a big job years ago an was workin' hand in hand with a pipefitter from NEWFOUNDLAND...<br /><br />i took him stripper fishin' an loved it ,since he was homesick... <br /><br />said he comes from a fish-for-a-livin' family...he told me the same thing,, to bleed the fish...<br /><br />also, he said to ,,, the best way to cook fish ,,hands-down,, is to boil it..!!!<br /><br />i couldn't believe what he said.. but he says it's true.. then when it's on your plate,,, then you add your spices, sauses, or butters,ect...<br /><br />you know what..??? he's right..!!!

Sharks as well as many other species of Salt Water species are better bled. The only freshwater fish I ever heard of doing it to were fish like carp and other not so glamorous fish that usually don't make table fare. I guess it would work to make any fish taste better.

yes I does work I bleed every fish Im going to eat but you have to watch it you want to bleed the fish not engulf its cavity with water. yes blanching any fish does make it better. I always blanch my fish 5 minutes medium heat salted water then I prepare it haw ever I want

A thirty pound Salmon has a lot of blood.<br />I've just started bleeding them this year after being told about it. It seems to help in cleaning, taste and smoking.

Only two types of fish I bleed Sharks and Sturgeon. The Sturgeon it is not really required but make a lot less mess. The 4 types of sharks it is a must if you want it to be want to eat it. We never bleed Salmon Just use water while cleaning to get it nice and clean.

I've never bleed my fish before,<br />sounds like it might be worth a try.<br />maybe it would help the taste of <br />fish from warm waters.

nosleep, are there really any warm waters in Canada? I can't even find any here in Wisconsin. <br />Maybe I'm just getting soft in my old age.

Here in Va. we bleed striper and bluefish. For the rest of the game, mainly flounder I filet and skin. Once home I rinse in fresh water then soak in water with salt added for at least two days if not 3 or four days changing the salted water at least once then vacuum seal. This seems to make the cooking experience much better and it doesn't smell up the house as much.

Most every fish will benefit from bleading. If I think about it I'll bleed em all before I toss em on ice.

I bleed out my salmon and steelhead, especially the hens. <br />Getting all the blood out of the eggs before curing them for bait is crucial. <br />I think that salmon which is bled out before smoking keeps better.<br />I do this on belief, and without any real proof, but it can't hurt.

Jack crevale are bleed before put on ice....I have some recipes somewhere but I have not caught one since getting them for a trial test.<br /><br />Derwood.
