Advice On Restoring Center Console Helm

Good morning,

I've been restoring a Maycraft and about to install the deck which leads to the console installation shortly. I plan on painting the boat's gelcoat with a 2 part paint including the console. I already have poly resin, cabosil, 1.5oz CSM, 1708, and wood so I'd like to try to restore before paying over $500 for a new one. Can anyone provide advice on the best way to restore the console?

Plan of action since I am not the best at laying up fiberglass while making it pretty was to grind out all spider cracks (as I have started), fill with poly resin and cabosil, sand it, and paint. While I'm doing it I'd like to replace all wood and beef up the areas that had spider cracks with 1708 on the underside. My question is can the wood under the helm and gauges be cut out clean with the glass and gelcoat on the topside intact or would it be impossible? If so I could glass new wood with CSM, install with peanut butter, then glass it into place.

If there's a better way to go about this please help!
