Generally speaking, the engine is running very rich and the fuel isn't being completly burned, so it's getting past the piston rings and into the oil. Is it carbureted or injected? If carb, look for a stuck choke or perhaps floats set too high. If injected... go find a competent mechanic.
Of course, it could be that the rings are shot too. :(

By the way, if it's running rich, your fuel consumption will be higher than normal and you might expect to see black smoke from the exhaust. If the rings are bad, the smoke will be a bluish color and you'll consume oil at a higher than normal rate.
Pull some of your spark plugs: Normal plugs should be a tan color; A rich mixture will give you a black fluffy coating; Oil burning makes the plugs look oily and dirty.
Try a new set of plugs: If the current ones are fouled, then the unburned gas will contaminate the oil.
Also, a weak ignition system can cause this problem. What condition are your plug wires and distributor cap and rotor in? Perhaps the coil is weak.
Those are the easiest things to check.

Just saw your other posting about overheating. Combine that with gas in the oil and it's not a pretty picture. If it's been overheated that badly, your probably looking at a rebuild. Do a compression test first though. If the mechanic says that all you need is a head, consider yourself lucky. But heh, parts for a small-block Chev are probably the worlds cheapest and easiest things to find.

if your engine has a mechanical fuel pump it may be an internal leak in the pump putting fuel into the crankcase
