I would trust the paperwork on it: looks to be pre HIN era (earlier than 1972). So, no real telling what it is. Could be a Sears hull; there were several manufacturers.

I'm not opposed to electric cars. There are a few that seem pretty slick. But, I don't think the whole of transportation is going to go completely electric; including cars.

You likely won't find one online. Those types of things aren't published normally. However, if you contact Mako they "might" be able to send you something to help you see the layout.
I'd say pull the boat, get it nose high on the trailer and see if you get any water dripping for an extended...
If the boat had been running normally up until the impeller change (as in it hadn't sat for years), then that would be my first suspect - either something was done wrong, or the aftermarket kit didn't work right.
Can you test water flow up by the thermostat and make sure that you're pulling...
Welcome aboard: are you sure the impeller is installed properly? (Start with the basics, right?) - I'm assuming this is a boat you've replaced the the impeller before?
Boat manufacturers typically didn't/don't publish any sort of significant manual. So, it's not unusual to find one.
The motor will have plenty available though.
