Something must be wrong with me. Duh.
I can't stand eating raw meat.
Tough raw dried meat just gives me a stomach ache.
Of all the recipes I've read here over the years, very few contain curing salts.

At least JB is cooking to a safe temperature, but I guess that means he isn't making jerky then.

I'll stick to cured and smoked meats.
Or smoked and cooked meats.
