me and my wife are looking at getting a 2012 seadoo challenger 210 and would like to be able to fish off of it and was just wondering if that is even reasonable to do

No reason not to, at least for casual,"fun" fishing....but not too much room for bait buckets, tackle boxes, coolers, etc.

People fish off kayaks, canoes, jetskis, runabouts...heck, even a lot of debate about the "bank" being the best place.
The pros are obvious: you're on the water, fish are in the water, fish for them. As to the cons; stay away from the
grass flats because they can be the enemy to your jet motor, and, the jet isn't really ideal for trolling, so consider
a trolling motor. Having said all that, there are tons of "fish-n-ski" boats out there already set up to accomplish
your goal - a pleasure craft for momma and a fishing boat for day (or visa versa).
