Will having the wrong carb jets make my ski run hot?

Just put a new carb that I got off Ebay last year on my '93' kawasaki 750SS. When we tried it out in the water, it ran better and faster than it ever has. For about a minute that is! After that it went into limp mode. Got it back to shore and found that the engine was much hotter than it should have been. Someone told me that I might have the wrong jets in the new(used) carb. Would this be something to do with the stock pipe and mismatched jets?

usually on those it is a clog in the hose from the pump to the engine restricting water flow to cool the engine,, if you ran it hot you will need to retorque the head or replace the head gasket,, pull the hose off the engine and force flush it backward toward the pump to clear out sand etc then see how it runs,, if it is lean,, you will have pre ignition and fouled plugs with silver on them and eventually burn a hole in a piston

what jets are in it now?
you want to rebuild those carbs
