I've been in an apprenticeship the last year and i've learned almost enough to the point of being possibly a mobile marine mechanic (fix about 3 motors a day), which sparked the idea of international jobs working on outboards. Working in Croatia or Japan or anywhere exotic like that seems super fun to me. Just curious of anyone that has any experience with this and any insight on if it is even a good idea/possible.

I hardly consider Japan "exotic" but since outboards are built there, there might be some opportunity. In other less developed areas, people become pretty self-reliant as there may not be a lot of money for paid repairs. However, you may want to think about the commercial side of the repair business. Regardless where you might go, access to parts and the cost of those parts may be a strain on the business. My feeling is there is plenty of opportunity for mobile mechanics right here in the good ole U.S. of A.
