I've heard the horror stories about Armor All...BUT having used it since the 80's on car seats and dashes I never saw any of the reported issues. And that's after 10+ years of use in the same vehicle as my family ran cars into the ground.
Cleaning wise for vinyl, defer to the manufacturer instructions (provided you have them) or use a mild cleaner followed by some protectant. Personally, I've used diluted Simple Green to clean more pronounced stains. After 12 years of ownership, boat still looked new. On more stubborn stains, Four Winns included a concoction of distilled water, hyrdogen peroxide, white vinegar which worked really well once the boat sat out in the sun for a bit. Didn't harm the green upholstery at all.
As for wax...I use Meguairs(sp?) about once every other season. I start the boat out clean, wax, run it for a year, wash down before winterization, and then follow up with a spring cleaning to start the season out again. I'll even use either a cleaning wax or rubbing compound (followed by wax) to get out some of the nastier stuff.
