When I start my VP 3.0L it starts fine with 'heavy' throttle but stalls out at idle position even when engine is warm (T-stat at 150-175 F). Any thoughts?

Howdy

The 3.0L comes in a few configurations, carb, TKS and EFI, which is it?

Using a heavy throttle (think this means high rpm) and it dies on idle (also assume regular carb), then I think your carb needs cleaning.

The above is just a guess based on very little info.

You may also have compression issues, fuel issues, and a bunch of other things.

Is this a new to you boat?
Did it always do this, or is this new?
How old is the gas?

Tell us more about what lead to the problem

Volvo Penta came with Holley carburetors. Adjust your choke. If that doesn't work, do a carburetor clean and rebuild, then adjust your choke settings

The carb is a Holley, no Fuel injection. Last winterized 1.5 yrs ago. Did proper winterization and fuel stabilization at that time. Already drained and added new fuel. This is the 1st time for this problem.

Motor will run if rpm is kept high, and will die when rpm goes lower

If this is the case, then probably need a carb cleaning as Scott mentioned. If you have a fuel filter caster type, dump the contents into something clear so you can verify it there is anything but clean gas
