I have an older Johnson outboard, Model: 35R76S and serial L4455693. Can you guys tell me what year it is? What fuel/oil ratio should I be using?
Why does it die when I let go of the throttle handle? I know it's idling too low, but someone told me that is normal for these motors, is that true?

That's a 1976 model. Fuel:Oil ratio is 50:1.

As for it dying at idle, no, it shouldn't do that. It's not normal. I don't have that model, but check for a idle limiter screw on the carb. Just follow the throttle linkage and see if there isn't an screw which bears on part of the linkage when the throttle is closed. Adjust that to change the throttle speed.
