i have a 05 merc 3.0 motor is 175F to 180F to hot for the motor?

I believe my new 3.0 came with a 165 deg. thermostate,mine is fresh water cooled.
I have an alarm set up using a thermo switch for an electric automotive cooling fan that comes on at 180 deg. and sounds a buzzer and light. That gives me a little grace to get the engine shut down before boiling the antifreeze. I prefer the 165 temp.

I have a boat that I'm about to start restoring and I'm new to alot of the terminology. is Raw Water = closed system and fresh water = from the lake? the thermostat is one of the things that I plan to change just to make sure I don't have a meltdown after doing a bunch of work on it.

Raw water is lake water...
Freshwater is antifreeze...
