I have aquired this motor and gas tank that is still in it's shipping crate and has never been used. Should I use it, or would someone out there be interested in it as a museum piece? If I use it are there any rubberized parts that should be replaced in the engine prior to using it?

The impeller has probably taken a 'set', which is to say it's vanes probably don't stick out straight anymore. If it's not replaced there's a possibility that it will fall apart when used & clog up the cooling system.
