1979 Evinrude 70hp - starting when hot

I have a 1979 Evinrude 70hp that has been giving me fits.

On the water it starts right up and revs well, and seems to run just fine, even at WOT, until you turn it off. Once it's hot, it simply will not start. I've tried all sorts of tricks with the choke and the start lever position but nothing seems to make any difference. It just cranks without even hinting that it might turn over (almost like there's no spark - but having tested, there IS spark). This is odd because when it's cold, just bumping the starter starts it right up. Once the engine sits for a few hours it will usually start right back up and the process repeats.

I have had the carbs professionally rebuilt and replaced the power pack, no change...

I can't replicate the problem at home very easily because I can't get the engine hot when it's not working hard.

Any ideas about what this could be, or what I could/should test next time I'm on the water?
