I converted My '81 260 Mercruiser from the old log exhaust to EMI THUNDER center rise exhaust.
I had to change the thermostat housing to a newer style, with less hose conections. Question is can I run without a thermostat or is it absolutley necessary?
Below is a picture of the new exhaust and t-stat housing.

I'm not sure how the number of hose connections impacts whether (or not) you use a thermostat. By the looks of the t-stat housing on that engine, you should be able to have one in there, so you may as well.

The thermostat regulates engine temperature. Without it the engine will never reach a proper operating temperature. At the right temperature the cylinder block expands to the correct size and shape, as do the pistons. Also the low temperature contaminates in the oil can't boil off.
