Newbie wiht problems

Hi to all - new to boating and loving it - have been reading these forums since August of last year but I have a problem that I need some help on - Boat details 1987 Wellcraft Antigua 265 28.5 LOA 5.7l mercruiser 260 2 BBL , thunderbolt ignition - Boat has been running fine on short rides but yesterday when we were out on Lake Erie we were running great then all of the sudden stated losing power and speed rapidy - throttle all the way down nothing but engine was still running- put in neutral sat for a minute or so and the boat had power again but would not go over 3500 RPMS at WOT (still able to hit 28 knots) after 15 or so minutes stopped the boat and shut her down - would not start back up. After around 15 minutes she did start decided that we did not want to get stuck on Lake Erie headed back to dock still could not get above 3500 RPMS - docked - shut down and boat restarted without issue and could get RPMS (in neutral)
Boat is in pretty good shape and the previous owner took very good care of it
work done before putting her in the water and last fall
oil/filter change mobile 15/50
fuel/water filter
new plugs
new distributor cap
new ignition sensor
new water shutters

I did change the prop from a 3 blade 16x14 to 4 blade 15 1/2 x 17 doubt this would cause this problem

I am thinking fuel related - have a full tank of gas (Shell) that was stabilized before winter - where do I start trying to figure this out

Ayuh,... Pull the fuel filter, 'n see what's in it, besides Gas....
