You also asked the reason for surface gap plugs----Plugs such as these have no center insulator exposed to combustion heat and have the full length of center insulator cooled by the head. Thus: the plug is dead cold and in applications where the engine runs very hot (like some outboards) they help to prevent pre-ignition and detonation. As for the difference between the two, I can not say, only speculate: Sometimes the only real difference is in the length of the threaded portion due to the manufacturer making a thicker or thinner head. Some MAY have a resistor built in. However, since all my engines use BUHW or BUHX, I never looked into any differences.
Can you replace them with side electrode plugs? ---Yes, but it is not a good idea. I have seen engines with holes melted in the pistons from use of incorrect heat range plugs.
