operating temp

I am looking at a used boat with a 2004 Yamaha 150, carbed 2 stroke. I ran the boat on mufflers and then took the temp of the heads. The temp difference between the banks was significant, the left bank was 30 degrees cooler than the right bank. What does this indicate, the temp on the right side was 195, and on the left 160. All cylinders on either side tested close, within several degrees of each other.

Any insight, concerns, or explination would be appreciated. Comments please

Water hose does not give enough water sometimes, so it is best to run it on the water to test drive it anyway.
Could be stat not opening properly, restriction in cooling passages, PRV dumping water because it is not closing completely, water pump worn, etc

Thanks for the response, I must confess a lack of knowledge, didnt know engine had two theromostats, my best guess its a stat issue. When do on water test will do a full operating temp test.
