winterizing 3.0L volvo

This is my first winter with my Larson 180 Sport. I'm about to winterize it. I have a couple of questions. After draining the block and the manifold, and then running pink anti-freeze through the motor via the lower unit (muffs), the manual notes that the plugs should stay removed for the winter. I've never done this before on any engine. I usually replace them, loosely, to keep the anti-freeze from seeping out. What does everyone else do? Second question: a dealer told me that I have to winterize the power steering system. Apart from just checking the fluid level and topping it off, how does one do this? What on earth was he talking about? I'm grateful for any input, here.
