Replaced fuel system but carburator bogs and dies when cruising for 15 min

Hello everyone I am in need of your collective knowledge in order to address an issue that is plaguing my 1976 Bayliner Nisqually 2350. The Nisqually has a VP 350 / 280 OD the only number on the engine block that I could see was on the back top where the transmission mates to the block, serial # GM 0066038.

DISCLAIMER: I am mechanically inclined but I am not a mechanic! I'll try to keep this short and to the point!

The initial problem was that the engine was shutting down during cruising. Found out it was getting fuel intermittently. Replaced the mechanical fuel pump and it pumped a hell of a lot better than the old one but fuel was still intermittent during acceleration and cruising.

Ruled out the fuel pump as a problem and thought it was the process of "actuation" from the camshaft lobe either being rounded out or the push rod shaft to the pump was somehow bad. Cant fix that since I am not rich hence the old boat. So I decided to cap off the fuel pump and install an electric Carter Rotary Vane Coast Guard approved pump to resolve the issue.

Went out to test it in the water ran great under load, took it to 3400 rpm for a while 10 15 min then it started bogging down and shutting off, but this time it was a little different. I had a clear fuel filter before the carb for the troubleshooting purpose of seeing if there was gas in the line and it had fuel. But when I tried to start it the engine barely even turned over like if it was overheated. Other times it would start back up. I checked the water temp and it was at 170. Not quite sure what the operating temp is though. The engine has a brand new high torque starter so I know it cranks like crazy that's why I noticed the sluggish start at all.

Forgot to say that I changed to the fuel filter, checked all the lines and they were good and clear of any obstruction, did compression check and it was good to go especially after the engine was rebuilt about two years ago, filled the tank with fresh gas and changed the spark plugs.

I checked the spark plugs after we limped to the slip and even though they were new they had that light "grayish" look from running lean.

I checked the impeller even though it was recently changed and it looked good. I noticed though that when the engine was on and during acceleration there was an intermittent metal to metal noise coming from the damper area where the impeller housing and bearing are located. I thought lack of lube or bearing failure but the bearing didn't look out of the ordinary.

I don't know exactly how the marine exhaust manifolds work but I know that when the engine runs there is a small leak coming out of them near the elbow connection. As soon as the engine warms up it goes away. I don't know if its because they expand due to heat or there's no longer water running through them!

I guess I can buy a box of matches for a buck and resolve the issue!
