how much water should come out of the exhuast if the impellier on my 18 hp johnson is working correctly. thanks for any info.

Should be a healthy spray of water coming out the exhaust relief port (large hole) on the back of the leg.

thanks It's has a pretty good spray at high rpm not as much at an idle. Should I replace the impellier

If the impeller hasn't been changed in the last 2 years, or so, it's probably worth it. Never hurts to have a good waterpump. There are lots of vids on youtube of your motor and similar models running in test tanks and on the open water. It can be helpful to watch a few to get an idea of how much water you should be pumping and where your motor should idle, etc...
