Enigne Operating tempeture

I had my "new to me" boat out for the first time after some repairs this weekend. It ran great but I am curious as to the tempeture. 1990 merc 5.0 lx

I put a new thermostat a few weeks ago. I don't have much to compare to as the boat is new to me but the tempeture gauge read about 120 the entire time I was out (about 1.5 hours). I have a 140 degree stat in.

Does this seem normal? Seem ok? Like I said i really don't know what to compare it to. I felt the manifolds and they were warm/hot the risers felt warm/cool. I would guess the water tempeture to be at 55-60 degrees, I don't know if that played a role or not.

Any advice is appreciated!

My 5.7 L runs all day long at 150 with a 140 stat in it, but here in Tampa the water temps are in the 80s so I'm not sure. Boat all tuned up right, etc? I know you said it ran great....

What do the plugs look like? The FSM has a great section on reading plug condition for how your engine is running.
