How do you test the thermostat?

I unscrewed the thermostat housing from my 1998 35hp outboard to make sure the thermostat is still operating ok but am now a little stumped. How do I test that it is still working?

Clean it all up and test it in a pan of hot water on the stove top

Heat it slowly up to the specified opening temperature
That's the temperature at which it should just begin to open

I can honestly say that Ive never done this. If Im going to open it up, take it out, buy a new gasket, a new t stat is going in! I usually just change them every 3 years with my waterpump as a maintainence program.
