I've got a 88' searay with a 135hp merc. When I've got it going about twenty or faster and take a slightly tight corner the boat revs up on me and i have to slow down for it to pick back up. Any ideas

You could possiby have a spun prop, or you are cavitating, improper trim setting.
Prop to high in the water.

Check that your anti-cavitation plate is parallel and even with the bottom of your hull.

If I trim for best speed at WOT and then slow to take a turn I have to trim down or it blows out, pretty common.

Prop needs to be in excellect shape to be efficient ( no nicks or dings) and any damage can cause cavatation. Adding extra cup to leading edges will help this as well as have pitch checked as alum & s/s props can loose pitch angle on one or more blades..
