I have an '89 modle 19' Bayliner Capri with a 2.3L Ford engine and an OMC Cobra OutDrive and do not like the lack of power. Would I be cheaper out to upgrade to a larger engine or do a 3 angle stainless steel valve job and bore this engine for more power? If I went with the upgrade to a larger engine, what engines will fit my boat? Can I get an adapter/conversion kit to install a V8 engine?

Iroc, Upgrading to a v6 or v8 would get very involved, you would need to beef up or even add engine stringer's Change your outdrive, get exhaust manifolds and riser's y-pipes etc, very costly...working your 2.3 would not result in much either, but i have seen the odd 2.3 with a turbo that I believe might have been by OMC but not completely sure... I would sell the bayliner add some money to the pot and buy another boat with a v6 or v8.......thats boat ownership they are never big enough or fast enough....
