Pressure Relief Valve

Someone enlighten me please. '75 70HP Evinrude - been sitting 5 years. I took it out for a fifteen minute shakedown the other day. Started, shifted, and ran fine! How's that, didn't even change plugs?! Just toodled around cove near boat ramp without ever going more than 1/3 throttle, just wanted to see if it ran at all. Good so far.

And then it just quit and wouldn't re-start. No warning buzzer that I heard. Plenty of fuel in the tank. I suspect that the thermostat/relief valve needs replacing. New water pump will arrive today, so that will get replaced this weekend.

Did the temperature switch shut me down? Small chance the pump is any good at this point, right? I'll be pulling and inspecting the 'stat and relief valve when lower unit is off.

What does the relief valve do?
What does the pressure relief valve actually do?
Does temperature switch do anything other than activate the little buzzer?
