Best method for leveling stringers/deck

I have a concern about my re-construction, my hull isn't exactly symetrical (imagine that) Ha ha. My stringers are cut to fit but they are not level. Should I tab them in, then do a cut to the top of them? I ask because we started cutting the previous stringers and ended up too short. There is more depth in the hull beside the console and it slowly tapers off shallower towards the transom. I don't mind a little pitch toward the transom, I mainly want the deck level from port to starboard. Got any ideas?

Could you snap a chalk line from end to end then cut?

I'm in the same spot with mine. I plan to build a frame/jig that rests on the chine edges of the hull with braces running across above the bulkheads. This should give me straight edges representing the bottom of my floor to measure from as well as clamping surfaces to hold the stringers and bulkheads in place while the epoxy sets. Then I plan to make templates with cardboard, then transfered to pine, then transfered to the stringer marine ply.
