From what I've read the starboard trim pot is for the gauge settings only; am I correct? Setting this pot will not affect the limits for trim up and down will it?

No, won't change what the trim pump does, just how the guage reads. The way I like to set the adjustment is to trim the drive so that the cavitation plate is exactly parallel with the boat bottom. Then adjust the trim sender so that the gauge reads on trim center mark. Then you know when you are trimmed up or down from neuteral.

Ill double up on Lodgepost suggestion!

Thats how you know just where they are and makes for super easy adjustment when on way.
Easy to find your sweet spots and after that its just a flick of the button / or switch .
