Now the sun is finally out in the UK, when I remove my cover and inspect the engine she's covered in condensation. Other than keeping the cover off are there any tricks of the trade or products that I can use to absorb the moisture?

Noy much you can do other than keep engine coated with a rust preventative film.

You can ventilate the engine better, and spray it with the corrosion control stuff.

Re: Sweaty Engine

The engine gets cool at night and when it heats up under the cover/tarp during the day the water sticks to it just like the elements/coils in a dehumidifier. I too suggest letting the boat breathe. This should fix your problem ans also may keep your wood and vinyl from rotting. Make sure it is as dry as possible before you close it up.
