Fiberglassing stringers

Here is the basic design of my stringers:

I've got 1.5 oz mats and as I was lying them down and cutting them to shape, i noticed that due to the long strands i was using, the mat were not lying flat in some sections and was worried that this may cause problems when glassing(bubbles?). Should i just cut the mats into thinner strips? If so whats the pattern i should maintain? (ie. slightly overlap, or do like a brick laying pattern)

Also, will two layers be sufficient enough? All i need is to keep the water away from the wood. I've glued the stringers in with special adhesive and there rock solid, so strength isn't an issue.

Overlapping is fine. Blob on lots of resin in the area you're going to overlap and it'll work great.

How many layers do you recommend to protect the stringers from water damage?

Also, How many inch's of overlapping?
