My parts and repair manual are pretty vague in this area. How many thermostats do the 800 stringers have? My electric shift has one 140 for the engine and one unknown temp for the thermostat housing. After taking off the thermostat housing on my 800s I found that it just has the one 160 thermostat in the top of the housing. Is this correct? Should there only be one thermostat in my electric shift too?

You stated your 140 has one for the engine and one for the thermostat housing. That does not make sense.

Won't never say never but I find it hard to believe that a marine motor has more than one thermostat. It is usually located in the same position as it's automotive counterpart but accompanied by a marine specific housing to rout water to all the necessary places.
