You need a higher pitch prop at least 1" more maybe 2". If you are currently using a 12 pitch prop try a 13 or 14. Going to a higher pitch will decrease your RPMs and give you more top end speed but you will lose some hole shot. Ideally you want your RPMs at the top end of the recommended range (5500 to 6000 RPMs for a Merc 60 4st). See the props forum for more info.
I have the same engine on a 2006 Lund 1660 Classic side console (860 lbs dry weight). I run a 14 pitch prop at 5900 RPMs at wide open throttle (WOT), trimmed out, with a top speed of 35 MPH on GPS with a moderate load. With a very light load I have hit 38 MPH on GPS.
Until you find the right pitch prop try and keep your RPMs below 6000. Hope this helps.
