1975 merc 850 not cooling?

i am trying to figure out if i am cooling this engine right.i attached a motor flusher over the water intake on the lower unit and turned the garden hose on.i ran the engine for about 5 mins it ran smooth and rpm range seemed normal but it seemed to run hot, melting paint off the block and smelled hot.I noticed a threaded plug on the lower unit that was marked flush.am i supposed to pull this plug out when running?how can i confirm the water pump is working properly?the engine is a 1975 mercury 850

When using muffs you leave the plug in, there should be water flow coming out of the telltale or a dribble out of the exhaust ports, you need to drop the lower unit and check the impeller and while is down hook a hose to the water supply tube to the engine and see that somethig is not plugged in the system.
