Exhaust manifold/riser questions

1977 Glastron SS-V 189, Mercruiser 888 (Ford 302 rebuild).

Existing factory exhaust setup has log-style, aft riser manifolds, with risers, and a very large y-tube that routes the exhaust down to the drive. I am potentially looking at replacing the manifolds due to cracking. It has been suggested in other posts to convert to center-riser manifolds. I would like to know why, and what else will I need to do this? It looks like some kind of center riser, and perhaps tubing to the y-pipe?

If I spend the money on the new center riser manifolds, which are cheaper than the stock type units, (took on a temp. second job to get this boat going for myself and the family), should I just dump the exhaust out the transom (Please save the 'it's too loud' posts, I have read and searched the forum extensively and understand both sides of THAT argument) and cap-off the y-pipe? I would actually prefer to keep the boat as quiet as it was originally, but the motor rebuild is taking a large portion of the budget.
