Question Jackplate set up

I have a 2000 Charger 296 with a Merc 150 XR6(rated for 200). I just recently put a 10" jackplate on it and noticed right off of the bat that when I trimmed up I actually got on the pad for the first time since I have had the boat. When installing jackplate though noticed that about 2 inches of it hang past transom. When running trimmed all the way out I have a good roll instead of a rooster tail, but out to the sides looks as if I am getting some roostertail from the jack plate. can anyone suggest proper set up for pad to prop and the like. when idling with motor trimmed all the way down the back end of cowling is in the water, am I a bit to low?
