I have a '74 Mercury 402 40HP 2stroke longtail, and i would like to know how much fuel i need for a day out. I am thinking about getting a fuel-tank from 23 Liters. Will this be big enough? I realise that there is not a solid answer for this question, because there is a big difference between "just cruising" and waterskiing for a few urs, but i'd like to get an idea. The boat is a 4.85 mtr polyester Cresent, ~550 Kg.

23 litres? try 23 gallons for starters. @ 4 gal per hr that's only 5 hrs.

I dunno, I have 2 six gallon tanks for my 25hp Johnson ( 2 stroke ) and I've gone out twice and am still on the first tank of gas. On sunday, I trolled halfway around a 1700 acre lake, ran around a bit at WOT, trolled a bit more and then we ran back to the launch. If you have access to a removable gas tank, take it out and drive like you plan to use the boat and see what kind of usage you are going to experience with it.
