Would recommend not using starting fluid. No lubrication there. Possible engine damage may occur.
The choke button should be a momentary type switch. Once released the choke should shut off automatically.
Are you sure the solenoid is the problem? They can not be reset/repaired but you can test them. Using an ohm meter check between the wire terminal and the body of the solenoid. Should measure about 1 ohm if good. An open circuit is bad news.
To check the wiring, connect a voltmeter (or test lamp) between the solenoid terminal and a ground. Have someone push the choke button. You should get 12V (or lamp lights). If neither of the above, then wiring or the choke button is the problem.
