How much do you want to invest in this/ how much more function do you want out of it? I saw an empty console for a new Crestliner on Craigslist for $150 this winter, there's a guy that outfitted an older lund side console with a newer lund single console ( plastic thermoformed ).
As far as a windshield goes, are you planning on ducking behind it while you bust through the big ones to avoid getting wet, or do you want something to shade your gauges/look cool?
As far as a big enough piece of foam goes, find a foam shop in the yellow pages, I'm sure you can get a piece from them, or....put foam on top of another form and then form the foam if you are trying to glass your own.
