Transducer mounting

I have two questions. I have 2 transducers one on each side of the motor. I want to do away with the one and install a board for the other. I want to remove an old transducer bracket and screws that held the straps for the wire. What do I use to fill the holes? Is there something that cures fairly fast? I looked at 5200 but it says 5-7 days to cure. My boat is in the water and would like to pull it out of the water and get it back in a minimal amount of time.

I also want to mount something to the boat to mount my transducer. This will be on the other side of the boat. Can I epoxy this to the boat or will I have to drill oversize hole, fill with epoxy and then drill for hardware? What type of board would you use.

Sorry I thought I had mentioned that and missed it. It's a Trophy 1802. So I guess the answer is glass.
