150 opti 1000 rpm limit help please

HI ALL I HAVE TWIN 150 OPTI'S 2001 WHICH I JUST PURCHASED BOAT WAS NOT USED FOR ABOUT THREE YEARS. CHANGED FUEL PUMPS, SPARK PLUGS.
STARTS UP LIKE A DREAM. PUT IN WATER. ROAD AT 3000 RPM FOR ABOUT TWO HOURS THEN GOT REDUCE THROTTLE ALERT FROM SMART CRAFT GUAGES AND DROPPED TO IDLE. FIRST ONE THEN THE OTHER ABOUT 10 MINS LATER. PLEASE HELP I AM GOING NUTS. ONLY 72 HRS ON MOTORS.

Motors are going into safe mode due to overheating. Change the impellers. Mercury suggest changing these undersized problem makers once a year anyway. If the motors sat for a couple of years, I am sure the rubber has retained a memory curve inside the housing. I should know. I just fought the sme problem!

did that before, sorry forgot to mention. could it be old gas? i added about $200 to what was already in there. Also added octane boosters and water removers. fuel smelled fresh at gas cap. I also get an intermitent alarm saying water temp fault. read shop manual and it states water temp is temp of ocean it will show up even before i crank them up. also gives me a "oil remaining 100%" all the time. thanks in advance
