Do both heads at the same time?

I have a blown head gasket....I am going to have the head pressure tested, new seals, etc....should I go ahead and do the other side while i have it apart? Other side is getting good compression and everything....or should I just leave it be since it ain't broke?

The same as the other head; in age ,they are twins.

But what is that? :) I mean, new stem seals, decked, what should i do to the valves?

They will just check out the head and tell you what needs doing.If both headgaskets are the same age,do them both and have both heads checked.

I really hate doing a job twice,including pulling an intake manifold.

You would be wasting time and money doing one head only. A good engine shop will check the heads out then tell you what they need,regrind, head skim, valve seats etc. Use one that has a good reputation though.
