2000 50 hp won't idle/restart when warm

Engine runs great when first put in water, will not idle (stalls) after running for 2 or 3 hrs. Becomes increasingly difficult to start after stalling. Not a fuel issue. Carbs,fuelpump rebuilt. Waterpump rebuilt, pumps great. Plugs not fouled. Don't know what or how to check/replace next. Suggestions needed. Thanks.

Start with a compression and spark test when the engine dies. If those check out ok, look to idle mixture not set correctly, idle speed not set correctly, link & sync not set correctly, idle circuit in carbs not cleaned well enough when carbs were rebuilt. Floats not set to spec when carbs were rebuilt. Those are some things to start with. If you are tilting the engine very high when stopped, fuel can spill from the float bowl and tend to flood the engine at restart. Using the fast idle lever on hot starts helps.
