HELP...What what pitch and prop diam size do I need on a 75hp 4-stroke Honda ( 2007)

I should mention that the boat is a 17ft Sylvan 2007

Difficult to pin down accurately but I think a 17" is a good start. Don't worry about the diameter a prop intended for your motor will be right. If the 17 turns out to be light you can still use it and just be aware of the rpm. if you go with a 19 if its too much you shouldn't
use it extensively as it could lead to premature engine problems.
