Dashpots are an air cushioned device that facilitate a smother or more gradual decline in throttle from a running speed to idle. If your idle stop screw still touches the cam upon which it sits at the rest position, the motor should operate without the pot. However, a reduction in your throttle control will probably produce a faster slow-down of the engine and could feel rather jerky without it.
If you want to have the pot back on, there may be some universal ones at NAPA etc if the original replacement is not readily available.
