70 hp runs great with ears on

i have a 1975 70 hp evinrude 110 compresion on all cylenders ,good carbs ,new fuel pump an lines from tank to carbs fresh fuel new thermostat.runs great in driveway but when i put it in the water its hard to start an stalls when i put in gear at any rpm

your idle is set too low, it should be set at 600-750 in the water and in gear. have you check spark on all 3 cylinders? set you idle in neutral on muffs at 1,000 rpms , then fine tune in the water.
