I have a '56 Johnson 30hp and a '57 Johnson 35hp both on saw horses both have electric start and neither one has a wire harness attached. Can these be hooked up to turn over somehow without hooking up the wire harnesses up to them? Thanks for any help!

I have the same 2 engines.

Both engines should be able to be started without wiring harnesses. They could be pull started or you can use jumper cables from a battery directly to the starter. If you use jumper cables, hook the positive up first from the battery to the starter bolt then hook the neg up to the battery first and then to the frame of the engine last. That will make the spark happen at the frame hookup and not at the starter or the battery. It's the safest place.

Furthermore, if jumping an outboard, make SURE there is no puddled gasoline in the belly pan before you make any cable arcs...
