I can't find anything in the manual that says what it should be. I searched on here and realise they are within 10% of each other but isnt 105 low?

Also, when I bought the boat and motor, the motor had the oil injection bypassed so I asked what the right mixture was, he said 50:1 but he always added a lot extra, wont this cause problems? The plugs are nasty looking so those Ill change, anything else I can flush or do?

Yes the 105 seems a bit low. Did you check while the motor was hot or cold? Pressures will be higher at normal operating temperature. Also, you might try a decarb, could bring up the pressures a bit also.
