Re-upholster Kitchen Table Seating on 2001 Bayliner Ciera 3055

Hi! I am a new boat owner and we would like to re-upholster the kitchen table seating down in the cabin. We didn't know if anyone has taken off the back seating? It seems to be one big piece. Any tips or tricks? We have a 2001 Bayliner Ciera 3055.
