    Although ventilation will help reduce condensation, insulating is the fix for condensation.........IMO sheet armaflex is the best option, if it is in a exposed area it can be painted the a pliable white coating.....called armaflex WB finish.

    2 x 3/4"...and make sure that you check the bow in the pieces before you laminate; you'll want to counteract the distortion.

    3 sheets would be more difficult to counteract any warpage in the sheets.
